Magical Mango Coconut Burfi {Vegan Mithai}

November 8, 2014 - by Nadya

For part 2 of our {Vegan Mithai} series, we have some magical Mango Coconut Barfi to serve up.  These delicious squares of mango love began as a sort of experiment to see if we could recreate the exact texture of barfi using only vegan ingredients.  It didn't quite work, but they still came out tasting scrummy.  Give them a try and if you so happen to stumble upon the perfect combination, let us know!

Also, this recipe is insanely customizable.  If you don't like mangos or coconut, feel free to switch it up with vanilla or pistachios.
