Here’s my first attempt at making henna decorated sugar cookies.
I love hamsa cookie cutters. The hamsa is symbolic in Islam and Judaic cultures but you can use the hand as if it were real bridal hands. A great cookie to have at an Indian bridal shower!
The cookies are easy to make and I found them at Cake Journal along with the royal icing recipe. She has a super delicious blog.
The trick with the royal icing is to use a tip #1 or tip #2 (wilton brand) to get the fine lines. Plus your icing should be quite hard.
Recipe for Royal Icing
2 cups powdered sugar
3 tablespoons meringue powder
6-10 tablespoons warm water
My recipe for royal icing called for more water because in Sweden it’s quite dry. Consider that if you are in a desert climate.
You should have stiff peaks to do the fine icing. Remember if you use wet food coloring, you will increase the viscosity of the icing and may need to compensate with more powdered sugar.
If your icing is still hard, add more water and blend well with the mixer. If the icing is too wet, add more powdered sugar. Royal icing is forgiving (this was my first time making it in years).
