Macarons are all the rage right now. Just like cupcakes were the IT food the last couple years, the French’s macarons are taking charge of the pastry market.
Darn straight, it’s the year of delicate, colorful, tasty little treats. You can make macarons match ANY color theme possible, sky is the limit. And when it comes to flavors? The only thing stopping you is a macaron so weird no one wants to eat it.
The most famous macarons today come from the French pastry company, La Durée. They are gorgeous, and well, not cheap. But they are worth every cent!
But thinking of macarons and Indian weddings, here are few flavors we Asians would love:
Coconut – Nothing is quite as refreshing and delicious as coconut. Sprinkle on coconut flakes on the macaron and use a coconut cream filling. To make the macaron more decadent, drizzle on dark chocolate.
Chai Masala – For the fusion lovers, chai masala spices couldn’t find a better partner than with a macaron. I won’t even say more about how awesome this will be!
Mango – Flavor the macaron batter with mango extract and make a fresh mango jam. The Extraordinary Art of Cake has a great recipe. Or, order a dozen yummy mango macarons from Chantel Guillion (ships nationwide).
Saffron – Add a couple sprigs of saffron to the egg white batter so that macaron get the saffron yellow color. For the buttercream frosting, mix a tablespoon of warm milk with a 1/2 teaspoon of saffron. Let set so that the color of the milk becomes an intense yellow and you can smell the saffron. Strain the mix, keeping the milk, and add it to your buttercream. NOTE: This works with a buttercream recipe that calls for milk or heavy cream.
Pista {pistachio} – Instead of using almond flour, make pistachio flour. Color the macarons mint green and fill with a standard buttercream frosting. The Vintage Mixer does a half-half of almond and pistachio flours with raspberry buttercream.
Rose – Rose essence is typical of Turkish and South Asian flavors. Color the macarons, traditional recipe, dark pink or magenta, and make a cream cheese buttercream with rose extract flavor. Check out my recipe for rose flavored macarons!
