For part 2 of our {Vegan Mithai} series, we have some magical Mango Coconut Barfi to serve up. These delicious squares of mango love began as a sort of experiment to see if we could recreate the exact texture of barfi using only vegan ingredients. It didn’t quite work, but they still came out tasting scrummy. Give them a try and if you so happen to stumble upon the perfect combination, let us know!
Also, this recipe is insanely customizable. If you don’t like mangos or coconut, feel free to switch it up with vanilla or pistachios.
Ingredients:
- 1/2 c. sugar
- 1/2 c. water
- 3/4 c. flour
- 3 oz. full fat coconut milk
- 1/3 c. soy custard/yogurt
- Coconut shavings for topping
- 1/2 c. mango pulp
Directions:
1. In a pan, heat the sugar and water till it forms a syrup.
2. Mix in the flour, custard, and mango pulp.
3. Stir over heat until the mix becomes sticky and thick.
4. Coat a tupperware or baking dish with coconut flakes.
5. Pour in mix, pressing slightly to fill container. Cover with coconut flakes.
6. Leave to chill in fridge overnight.
7. Cut into squares and serve.
