This week’s fall drink, masala milk, is perfect for chilly weather or cold nights. Some Desi readers might remember it fondly, as it’s often a sweet drink served to children on auspicious times or family get togethers.
The name of this drink is quite misleading as there’s no spicy ingredients in the milk. Masala milk is a sweet, nutty hot drink that’s steeped with the gorgeous flavors of cardamom and saffron. The soothing taste and temperature are perfectly suited to lull you away into a dreamy sleep.
Ingredients:
(Makes 4 servings)
1 quart of half and half milk (this thicker style works best, but you can substitute it with any form of milk if you wish)
2 tbsp sugar
1 tsp cardamom pods (peeled)
1 tsp pistachios (shelled)
2 tsp chironji nuts (also called almondettes)
5-10 strands of saffron
A pinch of nutmeg

Total Time: 20 mins
How-To:
1. Chop the cardamom and pistachios in a processor until a powdery mixture remains.
2. Add the milk to a thick-bottomed vessel. Keep the heat on medium until the milk starts to bubble.
3. Add the saffron, cardamom-pistachio mixture, sugar, chironji nuts, and a pinch of nutmeg to the warming milk.
4. Allow the milk to simmer on medium-low heat for 15-20 minutes. Stir frequently to prevent the milk from boiling.
5. When the milk is slightly frothy and steaming hot, remove it from the heat.
6. Pour the milk into mugs and allow it to cool to a warm temperature before drinking.
7. Enjoy your sweet treat!
